

Instructions
To make the pastry dough,
1. add all the ingredients into a bowl except for the water.
2. Gradually add in the water to form a tough dough, The mixture can have an allowance of another 10-20ml of water if the dough doesn’t come together.
3. Knead the dough until it becomes a smooth ball.
4. Let the dough rest for 1 hour.
While resting the dough, make the sardines filling.
1. In a pan, add oil and sauté the chopped onions and chilli padi.
2. Add in the mashed sardines and coat it with the sambal mixture.
3. Add in the herbs, and adjust the seasonings with salt and sugar.
4. Squeeze the lime juice over and let it cool.
5. Divide the dough into 20g pieces. Make sure to oil your countertop.
6. Roll them out thin, cut into circles, then fill them up with the sardines mixture. Fold the dough into half then crimp down the edges.
7. Fry them up in hot oil of 180 degrees and enjoy!
